Environment of Jiu Ling Beef Noodle Soup
“Jiu Ling Beef Noodle Soup” is located in the Xitun District of Taichung, and it’s only a five-minute walk from the Taichung Metro Sakura Station. If you prefer to drive, there is a nearby parking lot that is just a two-minute walk away, making it very convenient to visit.
The interior of “Jiu Ling Beef Noodle Soup” is bright and comfortable, with plain painted walls adorned with decorative frames, giving a modern and minimalist style. The restaurant has around twenty indoor seats, including four-person tables suitable for families and bar seats suitable for people dining alone.
The ambiance inside the shop is maintained in a very clean and tidy manner, creating a comforting atmosphere for diners to enjoy their meals at a leisurely pace. It completely overturns the typical impression of small eateries being dim and old-fashioned! The air conditioning ensures a comfortable temperature, so you won’t break into a sweat while eating your noodles.
If you don’t pay attention to the signage, you might even mistake it for a café!
The condiments and pickled mustard green inside the restaurant are all homemade by the chef. They are placed on the table along with the utensils, allowing customers to help themselves.
The red one is chili oil, very fragrant, spicy, and appetizing.
The deep coffee-colored one is beef tallow. If you like strong flavors, it is recommended to add some beef tallow to enhance the richness of the soup.
Whether you want to add pickled mustard green to your beef noodle soup depends on personal preference. The thoughtful chef provides the pickled mustard green separately, so customers can choose for themselves.
The pickled mustard green at “Jiu Ling Beef Noodle Soup” is slightly salty and mildly spicy, with a refreshing and crunchy texture. The chef says it’s their unique secret recipe!
I recommend starting by enjoying the original flavor of the beef noodle soup. Don’t rush to pour the pickled mustard green into the soup at the beginning, or it might change the flavor of the soup.
After you’ve eaten some soup, you can then add some pickled mustard green to eat with the noodles or the meat, giving you a whole different experience.
Inside the restaurant, there’s a refrigerator for customers to self-serve beverages and side dishes. The prices are reasonable: side dishes cost $30 each, and a bottle of drink is $25.
They also sell frozen dumplings, homemade green sauce, and frozen steaks.
The coolest part is that they even have a specialized wine cabinet selling red wine! Red wine and beef are a perfect match!

At “Jiu Ling Beef Noodle Soup,” the beef soup is made by simmering beef chunks and vegetables for at least 4 hours, resulting in a rich and non-greasy flavor without the use of MSG or tenderizer.
■ Red-Braised Beef Noodle – Half tendon, half beef: NT $160 (Extra meat for NT$210)
The classic braised soup is the fundamental base for their noodle soup. It is made by simmering beef chunks with soy sauce and bean paste, creating a rich and balanced broth with a full beefy aroma.
The beef chunks used in “Jiu Ling Beef Noodle Soup” are from beef shank. While beef shank contains some tendons, it is thoroughly braised, making it tender and chewy. The distribution of fat in the meat is just right, not too fatty nor dry.
If you want both beef and tendon, the “half tendon, half beef” option is the perfect choice. The tendon is rich in collagen, offering a moderate toughness with a tender and chewy texture.
The noodles are of medium thickness and have a nice chewy texture. They are cooked just right, soaking up the flavors of the broth and enhancing the overall deliciousness.
We ordered all three bowls of noodles with extra meat, and the generous amount of meat made it very satisfying! The extra NT$50 is definitely worth it!
■ Signature Fresh Tomato Beef Noodle – Half tendon, half beef: NT$165 (Extra meat for NT$215)
The fresh tomato series at Jiu Ling Beef Noodle Soup incorporates a scoop of tomato puree into the braised soup. The tomato puree is made from fresh tomatoes, offering a soft tomato flesh along with its sweet and tangy flavor.
The surprising combination of the tomato’s sweet and tangy taste with the savory braised beef soup has made the fresh tomato series the restaurant’s signature dish. It’s particularly refreshing and delightful in hot summer weather. We found this flavor to be the most delicious among the ones we tried.
■ Spicy Beef Glass Noodles – Half tripe, half beef: $165 (Extra meat for $215)
For those who enjoy spicy hot pot, the Spicy Beef Noodle is the perfect choice. It’s not an uncomfortable spiciness but rather a flavorful and aromatic one, with a touch of numbing Sichuan peppercorns.
I always choose glass noodles for the spicy series because they absorb the spicy broth well, creating a fantastic texture.
I highly recommend the combination of beef and tripe for the spicy series. The beef tripe is perfect for the spicy broth, and the beef and tripe combo is delightful!
■ Broccoli with Crisp Fried Garlic:NT$40
Broccoli mixed with fragrant beef soup and topped with crisp fried garlic, creating a layered and flavorful taste. The Broccoli has a relatively soft texture, and the vegetable flavor is not overpowering, allowing the beef aroma to shine through.
■ Beef Tripe: NT$60
The beef tripe at “Jiu Ling Beef Noodle Soup” is generously thick and chewy, offering a delightful texture and rich braised flavor.
■ Beef Tendon:NT$60
Before cooking, beef tendon is usually quite tough, making it a laborious process to braise it at home. However, Jiu Ling Beef Noodle Soup’s beef tendon is delightfully tender and chewy, having a perfect texture. It’s braised with the beef, absorbing all the flavors from the beef soup, creating a superbly flavorful and chewy experience.
■ ■ Side Dishes – Spicy Cucumber: NT$30 / Spicy Seaweed Roots: NT$30
Both of the side dishes we ordered have a slight spiciness in their seasoning. The cucumber is fresh and crunchy, and the seaweed roots also have a nice texture. I dislike soft and mushy textures in side dishes, so I found these two side dishes at “Jiu Ling Beef Noodle Soup” very satisfying.

The noodles are also outstanding, with a pleasant floury fragrance and elasticity, and they maintain their texture even after absorbing the broth. The combination of ingredients presents a harmonious balance, full of the fragrant aroma of beef and soybean paste.
You can customize the soup to be lighter if you prefer, and if you want more soup, they offer refills! With the option to add extra meat or noodles, even those with a great appetite need not worry about not being satisfied. I highly recommend this beef noodle soup restaurant!

“Jiu Ling Beef Noodle Soup” offers quick and convenient frozen packs of beef soup! The noodles included are oolong noodles.
After boiling the frozen pack in a pot, add the oolong noodles and cook for 30 seconds, and it’s ready! It’s a great companion for camping or a late-night snack at home!
There are four flavors available: Red-braised, garlic, tomato, and spicy.
The original price is NT$180 per pack, but it is currently on sale for NT$159. The price is similar to the one in the restaurant, and it tastes just as delicious.
