Environment of Chamonix Teppanyaki (Taichung Dalong Branch)
The restaurants in the Jingming Commercial District are usually bustling on weekends, and if you haven’t made a reservation in advance, it can be difficult to find a place to eat.
Fortunately, on that day, although Chamonix Teppanyaki was also crowded, we were lucky enough to only have to wait for about 15 minutes before getting a table on the spot!
Chamonix is the name of a beautiful town in France and serves as the starting point for cable car rides to the magnificent Mont Blanc in the Alps. The restaurant is named after this town, and its brand spirit is aimed at creating the pinnacle of teppanyaki cuisine.
The interior decor of the restaurant is in a glamorous and classical style. The color scheme revolves around their brand flower, the blue-purple iris, and is complemented by luxurious golden accents.
In addition to the teppanyaki dining area on the first floor, there is also a separate dessert area. After finishing the main course, the staff will guide guests to the spacious and comfortable dessert area, where they can leisurely enjoy their desserts.
The dessert area is indeed very beautiful.
On that day, we were seated in the dining area on the second floor.
One of the highlights of teppanyaki is the ability to have a close-up view of the chef’s culinary skills.
The waitstaff will assist in laying out the napkin and providing wet wipes.
However, honestly speaking, the seating area can be quite narrow. Like most teppanyaki restaurants, the tables are closely positioned next to other guests.

Dishes in “Chamonix Teppanyaki”
■ Bread
The bread is freshly baked, with a warm and soft texture. The Parmesan cheese on the surface releases a delightful aroma when heated.
You can have unlimited bread for free. However, if you eat too much bread, you might find it difficult to have enough room for the main course later.
■ Condiment
There are three different condiment options available.
First is the soy sauce with onions, which can be enjoyed on its own or added to the upcoming sakura shrimp fried rice for added flavor.
Next is the garlic fish roe sauce, which offers a sweet and savory taste. The texture of the fish roe complements the bread perfectly.
Lastly, there is rose salt, specifically paired with the steak.
■ Warm Appetizer-Lime and Fennel Cream Abalone & Truffle Steamed Egg
The steamed egg is cooked on the hot teppanyaki, resulting in a smooth and tender texture. The truffle flavor may not be very pronounced, but it does add a subtle aroma to the dish.
The abalone is drizzled with a creamy sauce, offering a chewy texture with a hint of delicate ocean flavor. Lime zest is sprinkled on top for an added touch.
The black decoration on the plate is… chocolate cookie crumbs! It’s a surprising element, but it adds a sweet and enjoyable touch to the dish.
■ French Porcini Mushroom and Beef Soup
The vegetables include zucchini, edamame, mushrooms, and tomatoes. They are served alongside beef jelly, which has a rich and gelatinous texture. The dish is garnished with a decoration of porcini mushroom thin crust.
After simmering the soup, the beef jelly dissolves into small pieces of beef fragments within the soup. The soup has a rich and flavorful taste, and it is generously filled with ingredients.
■ Scallop Seafood Soup
Japanese Hokkaido sashimi-grade scallops are served with squid chunks and slices of fish.
The staff will first bring the soup base and then pour hot soup. This method ensures that the scallops remain fresh and tender, as they are not left in the soup for too long, preventing them from becoming overcooked.
The soup is prepared with a variety of seafood and vegetables, resulting in a subtly flavored but refreshing and sweet taste when consumed.
■ Smoked Salmon and Cheese Salad
Smoked salmon with a filling of nut and berry cream cheese resembles a dessert. It is accompanied by a lettuce salad drizzled with tangy-sweet orange sauce, providing a refreshing texture.
The salmon pie is incredibly delicate and cannot be sliced. As soon as you try to fork it, it crumbles apart. Essentially, it needs to be eaten in a scattered manner.
The cream cheese filling is generous in quantity, but it can be a bit overwhelming when eaten alone. It is recommended to enjoy it with the salmon or lettuce for a balanced taste.
■ Truffle & Mushroom Salad
This dish is a warm salad. It consists of sautéed mushrooms tossed with peanut sauce and accompanied by lettuce. Lastly, it is topped with cheese flakes.
The sautéed mushrooms have a delightful aroma, and the addition of cheese flakes enhances the overall flavor. Personally, I highly recommend this appetizer.
The only issue is that some of the lettuce leaves may have fibers that are bit tough to chew.
■ Champagne Sparkling Drink & Lemon Sorbet
Non-alcoholic champagne is served in a tall glass, instantly elevating the dining ambiance. This drink is typically provided upon seating.
The Sorbet, a fruit-infused ice slush, is slightly tangy and sweet. It is served before the main course and helps cleanse the flavors of the appetizers, allowing you to fully savor the main course without any lingering tastes.
Both the champagne and the ice slush can be refilled limitlessly.
The chef has started preparing the main course. It’s fascinating to be able to observe the chef up close as they showcase their skills. You can hear the sizzling sound of the meat on the teppanyaki grill, which adds to the unique and enjoyable experience of teppanyaki cooking.
The “Duck Breast with Brandy” from another table caught my attention. It is prepared by igniting brandy, which creates a captivating visual display. The flame helps seal in the juices of the meat and allows the aroma of the alcohol to infuse into the crispy outer layer of the duck breast.
The golden-brown crust looks absolutely stunning! After the chef slices open the duck breast, the inside appears to be tender and juicy. It’s understandable to feel a moment of regret for not ordering the Duck Breast with Brandy.
■ Dreamy Wagyu Set – Half Boston Lobster
The Dreamy Wagyu Set includes an additional main course – seafood. Originally, the seafood consisted of a prawn and Hokkaido scallop, but we upgraded it by paying an additional NT$188 to have half a Boston lobster instead. The lobster is incredibly fresh with no fishy taste. The meat from the body can be easily separated from the shell with a simple peel, and it has a firm and succulent texture.
The lobster claws have already been cracked, making them relatively easy to open. The staff also provided scissors to help cut through the shell at the joints. They also offered a pair of plastic gloves to keep our hands clean during the process.
■ Dreamy Wagyu Set – Wagyu Beef
The Dreamy Wagyu Set offers a choice between “Wagyu” or “Iberico Pork with Berry Sauce” as the main course. We opted for the Wagyu.
The chef recommended cooking the Wagyu to medium, but we chose medium-rare.
If you’re not comfortable with it being slightly rare, it’s best to follow the chef’s recommendation for medium! The Wagyu beef has a pronounced sweet and savory flavor, and the texture is incredibly tender. It comes highly recommended!
The cross-section of the medium-rare Wagyu beef is incredibly tender!
■ Chamonix Special Set – Grilled Short Ribs with Garlic
The chef recommended cooking the beef ribs to either medium-well or medium, and we chose medium. It also had a delightful aroma and a slightly chewier texture with some tendons.
Although the garlic slices were delicious and crispy, they tended to overpower the natural flavor of the beef. It’s recommended to eat them separately, rather than combining them with the beef in each bite.
In comparison to the Wagyu beef, I personally prefer the Wagyu. For those with dental concerns, choosing the Wagyu beef would be a better option.
■ Seasonal Fried Rice
Each grain of rice in the fried rice is soaked in egg, accompanied by generous amounts of sakura shrimp and fish roe. The fried rice is fragrant and each grain is distinct. It pairs well with the soy sauce and onion condiment, adding another layer of flavor.
However, we were already too full to finish it, so we opted to have it packed to take away.
If you still have room for more, you can enjoy unlimited refills of the fried rice for free.
■ Drink – White Peach and Wild Berry Flavor Soda
A refreshing sour and sweet soda.
■ Dessert – Snowfall Brownie
This dessert, originally wrapped in a layer of plastic wrap, reveals a tiramisu mousse flowing down from the top when unwrapped. Unfortunately, I don’t have a picture of it before being unwrapped.
The bottom layer is a brownie, making it a dessert that would be appreciated by chocolate lovers.
■ Dessert – Summar Parfait
The dessert consists of fruit ice cream, fresh fruits, and a layer of panna cotta at the bottom.
Since it’s currently mango season, the dessert has a strong and enjoyable mango flavor. It sounds delightful!
Birthday Treat
When entering the restaurant, the welcoming staff proactively inquired if there was a birthday or anniversary celebration.
For birthdays, they would bring out a small birthday cake, which is a chocolate brownie cake, when serving the desserts.
The staff would also offer to take photos for the guests and print them out, placing them in a paper frame as a keepsake to be given to the guests.
